the perfect summer soup

Summer and soup. Soup and summer. The two do not normally intertwine. However, when it comes to gazpacho, they do. And marvelously so.

For those of you who are unfamiliar with this chilled tomato wonder, gazpacho is cold raw vegetable soup that has it’s roots in Spanish cuisine. The combination of fresh, uncooked, peak ingredients results in an explosion of summer flavors. It’s a summer vegetable block party in your mouth, basically.

It should come as no surprise that Wegmans makes a killer gazpacho. Paired with a piece of fruit, a crusty piece of bread, and a peppermint patty to cool things down a bit (gazpacho has some kick!) it’s a perfect summer lunch (and the one featured in my bag today.)

I’m not usually a fan of cold soups, but gazpacho is a welcome exception to that rule. Making my own will hopefully debut as an August Bucket List item…and leave it to Wegmans to not only provide the packaged version, but the recipe as well. Way to stay classy, Wegmans. Nicely done.
