weekend wonder : cherry pie oatmeal

I woke up yesterday morning fully anticipating a classic Pittsford morning: breakfast at Simply Crepes followed by biking along the Canal followed by browsing every aisle of Barnes and Noble followed by lunch at Pittsford Wegmans. It’s my favorite way to spend a morning!

But when I burst through the front door ready to seize the bright, sunshiney morning I was greeted with fewer degrees than I had anticipated. Significantly fewer! 40 degrees on June 3rd?! COME ON, ROCHESTER. Help a sister out!

In yesterday’s defense, it ended up being a picture-perfect late spring day. Wonderfully sunny and 70 degrees, which is much better than 40.  But I decided that instead of shivering through a Pittsford morning I’d postpone instead. Which means my breakfast plans were suddenly in need of assistance. You can’t go from expecting a Simply Strawberry Crepe for breakfast and wind up eating a bowl of cereal. That just won’t do.

As they say, necessity is the mother of invention.

PEOPLE…this oatmeal is unbelievable. It’s guilt-free cherry pie for breakfast! But it’s mildly indulgent and time consuming enough to make it a legit weekend breakfast option. Here are the details:


  • 1/3 cup Scottish Oats
  • 2/3 cup Water

Microwave for 4 minutes, then add in:

  • 1 tsp ground flax seed
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1-2 Tbsp milk of your choice (I used soy)
  • 8-10 cherries, pitted and quartered

Make sure the oatmeal is in an oven-safe bowl, then add the topping:

  • 1 Tbsp whole wheat flour
  • 1/2 Tbsp brown sugar
  • 1/2 Tbsp butter
  • 1/2 Tbsp oats
  • 1/4 tsp salt
  • 1/4tsp cinnamon

Pop under the broiler for 2-3 minutes, then add:

  • 1/2 Tbsp sliced almonds
  • 1 tsp brown sugar, sprinkled on top

After another 2-3 minutes under the broiler, you’ll end up with this:

Oh my land…so good. Please try it out sooner than as soon as possible.
